Why This Dish Is So Satisfying

These meatballs bring a tropical twist to a classic favorite. The sweet and tangy flavors make each bite exciting and satisfying. They are perfect for a casual meal or a special gathering with friends and family.

Practical Cooking Tips

- Use fresh herbs to boost the flavor of the meat mixture.
- Avoid overmixing the meat to keep the meatballs tender.
- Brown the meatballs evenly in a hot pan before baking for a nice crust.

Step 1

Warm your oven to 350°F (175°C). In a large bowl, mix the ground beef, bread crumbs, chopped onion, milk, egg, and salt until everything is well combined. Shape the mixture into meatballs and place them on a baking sheet. Pop them in the oven and bake for about 25 minutes, or until the bottoms are nicely browned. Once done, transfer the meatballs to your slow cooker.

Step 2

In a small saucepan over low heat, whisk together the cornstarch and brown sugar. Slowly add the reserved pineapple juice and vinegar, stirring until the sauce is smooth. Let it come to a boil for a full minute, then take it off the heat. Pour this sauce over the meatballs in the slow cooker.

Step 3

Add the pineapple chunks and chopped green bell pepper to the slow cooker as well. Cover and let everything cook on low for 3 to 4 hours so the flavors can meld together beautifully. When it’s ready, give it a gentle stir and serve!

Creative Serving Ideas

Serve these meatballs over steamed rice or alongside a fresh pineapple salsa. They also pair well with a crisp green salad or lightly sautéed vegetables for a balanced meal.

How To Store For Later

Store leftover meatballs in an airtight container in the refrigerator for up to three days. To reheat, warm them gently in the oven or microwave to keep them juicy. They can also be frozen for up to two months; thaw overnight before reheating.

Quick to make and full of flavor. I’ll swap pork for beef next time but still turned out great for a weekday dinner.

Good recipe but doubled the sauce ingredients next time, it was a bit dry for my taste. Otherwise very tasty.
