Directions

Place the garlic cloves in a food processor and pulse them until they’re finely chopped and smooth. Add a pinch of salt, then scrape down the sides and pulse a couple more times on low to keep everything moving. Next, with the food processor running on low, slowly drizzle in about 1 1/2 tablespoons of lemon juice using the drizzle attachment if you have one. Once that’s mixed in, start pouring in 1 cup of oil very gradually—this is when the mixture will start to emulsify and turn a creamy white. Turn off the processor and scrape down the sides to make sure everything is combined. Then, add the rest of the lemon juice and continue blending on low. Finally, slowly pour in the remaining 2 cups of oil while the processor runs until the spread becomes thick and fluffy. Transfer it to a container with a lid and pop it in the fridge until you’re ready to enjoy.
