Directions

Lightly heat your oven to 275°F (135°C) and line a baking sheet with parchment paper. In a medium bowl, mix together the brown sugar, water, salt, molasses, cumin, cinnamon, ginger, cayenne pepper, and nutmeg until everything is well combined. Add the pumpkin seeds to the bowl and give them a good toss so they’re evenly coated with the spice mixture. Spread the seeds out on the prepared baking sheet in a single layer. Pop them in the oven and bake for about 35 to 40 minutes, stirring halfway through to make sure they crisp up evenly. Once they’re nice and crunchy, take them out, give them a final stir, then carefully lift the parchment paper off the baking sheet and set it on the counter to cool completely. When the seeds are cool, break apart any clusters with your hands, and they’re ready to enjoy!
