Step 1

In a bowl, combine the ground lamb, basmati rice, 2 tablespoons of tomato puree, mint, salt, and pepper. Give everything a good mix and set it aside for a bit.

Trim the ends off the zucchinis and scoop out the centers with an apple corer or a small spoon to create little tubes. Then stuff them with the lamb mixture, packing it in gently.

In a large skillet, mix the remaining tomato puree with half a teaspoon of salt. Nestle the stuffed zucchinis into the sauce and pour in enough water to just cover them. Bring it up to a gentle simmer over medium-high heat, then lower the heat to medium-low. Cover the pan and let it cook for about 30 minutes.

After that, stir in the garlic, lemon juice, and the rest of the mint. Cover again and let everything simmer for another 15 minutes so the flavors can meld.

When it’s ready, slice the zucchinis into rounds and arrange them on a serving plate. Don’t forget to spoon some of that delicious sauce over the top before serving!
