Step 1

Combine the oats, flour, baking powder, cinnamon, and salt together in a big bowl. In another bowl, whisk the honey, applesauce, melted butter, egg, and vanilla extract until everything is smooth. Pour the wet ingredients into the dry ones and stir just until combined. Then fold in the chocolate chips and walnuts. Pop the dough in the fridge for at least 30 minutes—this helps everything come together—and you can leave it in there for up to three days if you want.

Step 2

When you’re ready to bake, heat the oven to 350°F and line a baking sheet with parchment paper or a silicone mat. Take the dough out of the fridge, and if it feels really stiff, let it sit at room temp for 5 to 10 minutes.
