Step 1
In a glass bowl, whisk together olive oil, Greek seasoning, lemon juice, and garlic. Add the chicken pieces and toss them around so they’re all coated with the marinade. Pop it in the fridge for at least 2 hours, but don’t let it sit longer than 4.

While the chicken marinates, mix the tzatziki with olive oil, lemon juice, and a pinch of salt in a small bowl. Set this dressing aside in the fridge until you’re ready to use it.

When you’re ready to cook, heat up your grill to high and brush the grates with a little oil to prevent sticking. Grill the chicken for about 5 minutes on one side, then flip it and cook for another 5 minutes or so until it’s cooked through. You’re looking for no pink in the center and juices running clear — about 165°F if you’re using a thermometer.

Meanwhile, toss together the romaine, bell pepper, cucumber, and cherry tomatoes in a big bowl. Drizzle the salad with the tzatziki dressing and give it a good toss to coat everything.
Step 5
Divide the salad onto plates and top each serving with the warm grilled chicken. Serve right away and enjoy!
