Why Everyone Loves This Recipe

Full of bold flavors and easy to make, perfect for busy weeknights. It combines familiar ingredients in a comforting way that the whole family will enjoy. Plus, it’s great for feeding a crowd without much fuss.

Quick Kitchen Tips

- Use fresh spices for the best flavor.
- Brown the meat well to add extra depth to the dish.
- Let the casserole rest for a few minutes before serving to help it set.

Step 1

Heat a large nonstick skillet over medium-high heat. Toss in the ground beef and chopped onion, cooking and stirring until the beef is nicely browned and crumbly, about 5 to 7 minutes. Turn the heat down to low, then stir in the diced tomatoes, black beans, picante sauce, and taco seasoning. Let it simmer gently until most of the liquid has cooked off, around 20 minutes.

Step 2

While that’s simmering, go ahead and preheat your oven to 350°F (175°C). Lightly spray a 9x13-inch baking dish with cooking spray. Lay the flour tortillas in the dish, overlapping them to cover the bottom and sides.

Step 3

Spread the beef mixture evenly over the tortillas. Then sprinkle on 3/4 cup each of Monterey Jack and pepper Jack cheese, followed by 1 1/2 cups of crushed tortilla chips. Cover the dish with foil and pop it in the oven for 25 minutes.

Step 4

When the timer goes off, carefully take off the foil and sprinkle the remaining cheese and crushed chips over the top. Return the casserole to the oven, uncovered, and bake until the cheese is melted and bubbly—about 8 to 10 minutes.

Step 5

Finish by sprinkling chopped green onions and cilantro over the top. Serve it up with some sour cream on the side, and enjoy!

Serving Inspiration

Serve with a side of fresh guacamole or a simple green salad to add brightness. A dollop of sour cream or a sprinkle of fresh cilantro on top also complements the casserole nicely. Warm tortillas on the side make it even more satisfying.

Proper Storage Tips

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, cover with foil and warm in the oven to keep the casserole moist. You can also freeze portions for up to 2 months and thaw overnight before reheating.
