Why This Recipe Is So Tasty

This dish combines the rich, hearty flavor of beef with the bright, tangy sweetness of blood orange. The citrus adds a fresh twist that cuts through the meat’s natural fattiness, making each bite balanced and satisfying. It’s a great way to enjoy a classic cut with a unique, vibrant touch.

Cooking Tips You Should Know

- Let the steak come to room temperature before grilling for even cooking.
- Marinate the meat with blood orange juice and zest to enhance the citrus flavor.
- Use a meat thermometer to avoid overcooking; aim for medium-rare to medium for the best texture.

Step 1

In a bowl, whisk together the marmalade, water, soy sauce, mojo criollo dressing, brown sugar, orange juice, ginger, garlic powder, and orange zest. Pour about a cup of this marinade into a large resealable plastic bag, then add the chuck steak. Seal the bag and turn it around a few times to make sure the meat is fully coated. Pop it in the fridge and let it soak up all those flavors for at least 8 hours, or overnight if you have the time. Cover the rest of the marinade and keep it in the fridge.

Step 2

When you’re ready to cook, take the steak out of the bag and discard the marinade it was in. Heat up your grill to medium and give the grates a quick oiling so nothing sticks. Grill the steak, flipping every 5 to 10 minutes or so, and keep basting it with the reserved marinade to keep it juicy and flavorful. Cook until it reaches about 140°F in the center for a nice medium doneness. Once done, let it rest a few minutes before slicing and serving.

Serving Suggestions

Serve the steak with a simple side of roasted vegetables or a crisp green salad. A light, citrusy salsa or chimichurri sauce complements the flavors well. Pair with a glass of red wine or a sparkling citrus cocktail for a refreshing contrast.

Storage Guide

Store any leftover steak in an airtight container in the refrigerator for up to three days. Reheat gently in a low oven or on the stovetop to keep the meat tender. Leftover steak also works well sliced cold in salads or sandwiches.

Flavor was great but I found it a bit salty for my liking. Will reduce the seasoning next time. Overall, nice dish.

Enjoyed the citrus, but I’d cut down the sugar next time. Otherwise, a solid, tasty grilled steak recipe.
