Step 1

Blend the mayonnaise and Cajun seasoning in a small bowl until it’s nice and smooth. Spread this flavorful mayo on both slices of toasted bread. Next, heat a skillet over medium-high and place the andouille sausage cut-side down. Let it cook for about 2 minutes, then flip it and cook for another 2 minutes. Once it’s nicely browned, transfer the sausage onto one slice of the bread, leaving a little gap between the halves—that spot will be perfect for holding the egg.

Using the same skillet, add a bit of oil and heat it over medium for about a minute. Crack an egg into the pan and let it cook without moving it for around 3 minutes. Carefully flip the egg and cook for another 2 minutes until it’s done just right. Finally, place the fried egg on top of the sausage, then pop the other slice of bread on top to finish your sandwich.
