Warm your oven to 400°F (200°C) and line a baking sheet with foil, giving it a light spray of cooking spray. In a medium bowl, mix together the chicken, bread crumbs, egg, Buffalo sauce, garlic powder, onion powder, salt, and pepper until everything is well combined. To keep things from sticking, spray your hands with cooking spray, then take a small handful of the chicken mixture and shape it into a ball about 1 1/2 inches wide, pressing a cube of feta cheese into the center as you go. Place each meatball on the prepared baking sheet and repeat until all the mixture is used up. Pop the meatballs in the oven and bake for about 18 to 20 minutes, flipping them halfway through so they cook evenly. Once they’re cooked through, transfer the meatballs to a serving platter. Drizzle with extra Buffalo sauce and ranch dressing, then sprinkle with chopped carrots, celery, and any leftover feta cheese for a tasty finish.
