Step 1

Stir the TVP, vegetable broth, and flaxseed meal in a large bowl. Let it sit for about 5 minutes so the TVP can soak up the liquid. Once that’s ready, add the oats, nutritional yeast, flour, vital wheat gluten, and all the spices—sage, black pepper, fennel seeds, garlic powder, thyme, smoked paprika, salt, and a pinch of cayenne. Give everything a good stir until it’s well combined.

Step 2

In a separate bowl, whisk together the water, soy sauce, and maple syrup. Pour this liquid mixture into the TVP mixture and mix everything until it forms a dough that’s a bit crumbly but holds together. Knead it a little to activate the gluten, then let the dough rest for 5 minutes so it firms up and isn’t as crumbly.

Step 3

Scoop out tablespoon-sized portions and shape them into small balls, then flatten each one into a patty. Heat some oil in a cast iron or nonstick skillet over medium heat. Cook the patties for about 5 minutes on each side, until they get a nice golden-brown crust. Serve warm and enjoy!
