Step 1

In a large bowl, mix the flour and salt together. Slowly add about 1/4 cup of water, adding more little by little until you get a soft, slightly sticky dough. Stir in the oil and knead everything until smooth. Cover the dough with a cloth or plastic wrap and let it rest for about 30 minutes.

Step 2

While the dough is resting, mash the boiled potatoes in a bowl. Add cumin powder, chili flakes, pepper, salt, crushed coriander seeds, dried fenugreek, chopped chilies, onion, and fresh coriander leaves. Mix it all well so the flavors come together.

Step 3

Once the dough has rested, divide it into small balls. Lightly flour your countertop and roll each ball into a square shape. Spoon some potato filling into the center of each square.

Step 4

Fold the edges of the dough over the filling, making sure it’s sealed with no gaps. Then, gently roll it out again into a flat bread, being careful not to tear the dough.

Step 5

Heat some oil in a pan over medium-low heat. Cook each flatbread until it’s golden brown and cooked through on both sides, turning carefully.

Step 6

Serve your potato bread warm with some mint raita or whatever dip you like best. Enjoy!
