Step 1

Melt some butter in a pan, then add chopped onions and cook them until they’re soft and translucent. Add minced garlic and sauté for another 2-3 minutes until fragrant.

Step 2

In a large bowl, combine ground chicken, an egg, breadcrumbs, milk, salt, black pepper, paprika, garlic powder, soy sauce, and chopped coriander. Mix everything together well.

Step 3

Grease a baking tray with a little oil. Shape the meat mixture into a loaf and place it on the tray. Bake in a preheated oven at 180°C (350°F) for about 50-60 minutes.

Step 4

While the meatloaf is baking, mix together brown sugar, ketchup, and mustard in a small bowl.

Step 5

After the meatloaf has baked, spread the sauce evenly over the top. Pop it back in the oven for another 10 minutes at 180°C to let the glaze set.

Step 6

Let the meatloaf cool for a few minutes, then slice and serve. Enjoy!
