Directions

Heat your oven to 275°F (135°C) and lining a 10x15 inch baking pan with wax paper. In a microwave-safe bowl, mix together the brown sugar and water, then pop it in the microwave for about a minute until the sugar dissolves. In a large bowl, combine the oats, salt, walnuts, and cinnamon. Pour in the sugar mixture along with the honey and vanilla, then stir everything together really well. Spread the mixture evenly on the prepared pan, pressing it down in small handfuls to form little clusters. Bake for 20 minutes, then take it out and give it a gentle stir with a spoon.
