Step 1
Gently heat your oven to 425°F (220°C). Line a baking sheet with parchment paper, then spread the broccoli slaw and red onion on it. Drizzle with a bit of olive oil and give everything a good toss to coat. Pop it in the oven for about 5 minutes, then take it out and set it aside—leave the oven on.
Step 2
Spread half of the peanut sauce over one pizza crust. Layer on half of the broccoli and onion mix, followed by half of the chicken and mozzarella. Do the same for the second crust with the remaining ingredients.
Step 3
Place the pizzas directly on the oven rack and bake until the crust turns golden and crispy, around 13 to 15 minutes. Once they’re out of the oven, sprinkle fresh basil, cilantro, and mint over the top for a bright, herby finish. Enjoy!
