Why This Dish Is Amazing

These individual frittatas are a fun twist on classic pizza flavors. They cook quickly and are easy to customize with your favorite toppings. Perfect for a quick breakfast, snack, or light meal.

Quick Kitchen Tips

- Use a non-stick muffin tin or grease it well to prevent sticking.
- Don’t overfill the cups to avoid overflow during baking.
- Let the frittatas cool for a few minutes before removing them to keep their shape intact.

Step 1

Warm your oven to 350 degrees F. While it’s warming up, drizzle a little olive oil into a pan over high heat. Once it’s hot, add the sausage and cook it, breaking it up as it browns—this usually takes about 5 to 7 minutes. Toss in the chopped peppers and cook everything together until the peppers soften, about 5 more minutes. Take the pan off the heat and let the mixture cool for a bit.

Step 2

In a big bowl, whisk the eggs with Parmesan, hot sauce, salt, and pepper until everything’s combined. Stir in the cooled sausage and pepper mixture. Give a 12-cup muffin tin a good spray with olive oil cooking spray, then pour the egg mixture evenly into the cups.

Step 3

Pop the muffin tin into the oven and bake for 15 minutes. While the frittatas are baking, warm the remaining olive oil in another skillet over medium-high heat. Add the garlic, onion, and oregano, stirring for a couple of minutes until fragrant. Then add the tomatoes and let everything simmer gently until the sauce thickens, which should take about 10 minutes.

Step 4

Once the frittatas are done baking, take them out and spoon some of the tomato sauce over each one. Sprinkle a little mozzarella cheese on top, then put them back in the oven for about 5 minutes so the cheese can melt. Finish by garnishing with fresh parsley and basil before serving. Save any leftover sauce for dipping or extra flavor on the side.

Best Serving Ideas

Serve warm with a side of fresh salad or roasted vegetables. They also pair nicely with a dollop of marinara sauce or a sprinkle of fresh herbs like basil or parsley.

Food Storage Guide

Store leftover frittatas in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven to keep them moist and flavorful. They can also be frozen for longer storage; thaw before reheating.
