Why This Dish Is So Satisfying
Cooking Techniques
- Chill the crust before baking to prevent shrinking and keep it flaky.
- Let the pie cool completely before slicing to ensure clean cuts.
Directions
Warm your oven to 400°F. Gently press the pie crust into a 9-inch pie dish, making sure it fits nicely. In a mixing bowl, whisk together the evaporated milk, brown sugar, Kahlua, corn syrup, and all the warm spices—cinnamon, salt, cloves, nutmeg, and ginger—until everything is smooth and combined. Next, add the pumpkin and eggs to the mixture and give it another good stir until it’s all blended well. Pour the pumpkin filling into the prepared crust, spreading it out evenly. Pop the pie into the oven and bake it for 10 minutes at 400°F. Then, lower the temperature to 325°F and keep baking until the center is almost set but still a little jiggly—this should take about 30 more minutes. Let it cool before serving, so the flavors have time to settle.
