Step 1

Preheat your oven to 375°F (190°C) and lightly spray a broiler pan with cooking spray. In a bowl, whisk together the buttermilk, 1 teaspoon of taco seasoning, and a pinch of cayenne pepper. In another bowl, combine the remaining taco seasoning with the bread crumbs, Parmesan cheese, flour, onion powder, salt, and black pepper.

Dip each piece of chicken into the buttermilk mixture, making sure it’s fully coated, then dredge it in the bread crumb mixture until it’s nicely covered. Place the coated chicken pieces on the broiler pan.

To be sure, check that the internal temperature reads 165°F (74°C) with an instant-read thermometer. Let it rest a few minutes before serving for the best flavor and juiciness.
