Helpful Tips For Cooking

- Use fresh lime juice to brighten the flavors just before serving.
- If you prefer a bit of heat, add some chopped jalapeños or a dash of hot sauce.
- Let the chicken rest a few minutes after cooking to keep it juicy and tender.

Step 1

Spray the inside of your Instant Pot with cooking spray. Pour in half of the chicken broth, then add the chicken breasts and sprinkle the taco seasoning over them. Next, toss in the beans, corn, salsa, and rice. Pour the remaining broth over everything, making sure the rice is fully covered.

Step 2

Close the lid and lock it in place. Set your pressure cooker to high pressure and cook for 22 minutes. It’ll take about 10 to 15 minutes for the pressure to build up.

Step 3

Once the cooking time is up, let the pressure release naturally — this usually takes around 12 minutes. When it’s safe to open, carefully remove the chicken and set it aside on a cutting board to rest. Give the rice a gentle fluff to keep it from sticking and pop the lid back on for another 5 minutes.

Step 4

While the rice rests, shred the chicken with two forks. Then, serve the rice in bowls and pile the shredded chicken on top. Enjoy!

Serve with a side of warm tortillas, crunchy tortilla chips, or a fresh green salad. Top with sliced avocado, shredded cheese, sour cream, or your favorite salsa for added texture and flavor.

How To Store This Recipe

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop, adding a splash of water to keep the chicken moist. This meal can also be frozen for up to 2 months.
