Gently heat your oven to 400°F (200°C) and get a baking sheet ready by greasing it or lining it with parchment paper. Blend the chickpeas until they’re smooth. In a big bowl, cream together the butter, brown sugar, and coconut oil until everything’s nicely combined. Then, add the eggs one at a time, followed by the vanilla and peanut butter, mixing well after each addition. Stir in the pureed chickpeas, then gradually fold in the flours, oats, baking soda, cinnamon, and salt. Once the dough comes together, fold in the chocolate chips. Scoop out spoonfuls of dough onto your prepared baking sheet, leaving a little space between each. Pop the tray in the oven and bake for about 10 minutes. When they’re done, let the cookies cool on a wire rack before digging in.
