Step 1

In a bowl, mix together the lemon juice, honey, Worcestershire sauce, and garlic. Add the chicken thighs and toss them around so they’re nicely coated. Cover the bowl and pop it in the fridge to marinate for about an hour, giving the chicken a little turn now and then.

When you’re ready to cook, preheat your oven to 425°F (220°C) and lightly spray a shallow roasting pan with cooking spray. Take the chicken out of the marinade, letting any extra drip off, and arrange the pieces in the pan. Pour the leftover marinade over the chicken, then sprinkle with some salt and pepper.

Pop the pan in the oven and bake the chicken, basting it occasionally with the marinade to keep things juicy. After about 20 minutes, stop basting and let it cook for another 20 minutes, or until the juices run clear and an instant-read thermometer reads 165°F (74°C) in the thickest part of the chicken. Let it rest a few minutes before serving.
