Why You'll Love This Recipe

These sandwiches are perfect for busy mornings when you need a quick, satisfying meal. They combine tasty ingredients in a convenient, handheld form that freezes well and reheats easily. Plus, making them ahead saves you time and stress during the week.

Smart Cooking Tips

- Use sturdy bread like English muffins or bagels to hold up well after freezing.
- Cook the eggs gently to avoid rubbery texture when reheated.
- Wrap each sandwich tightly in foil or plastic wrap before freezing to prevent freezer burn.

Step 1

Heat a large skillet over medium heat. Cook the sausage patties, turning them often, until they’re nicely browned and cooked through—this usually takes about 10 to 12 minutes. Once done, transfer them to a plate lined with paper towels to drain any excess grease.

Step 2

While the sausage is cooking, lightly spray a small non-stick pan (about 3 inches) with coconut oil cooking spray and set it over medium heat. In a small bowl, whisk one egg with a pinch of cayenne pepper, plus some salt and pepper to taste. Pour the egg mixture into the pan and let it cook without stirring for about 1 ½ minutes, until the bottom is set. Flip it carefully and cook for another minute or so until the other side is firm. Take the egg off the heat and put it on a plate. Repeat this with the remaining eggs.

Step 3

Once the sausage and eggs have cooled, it’s time to assemble the sandwiches. Place an egg patty on the bottom half of an English muffin, add a slice of cheese, top with a sausage patty, and finish with the muffin top. Wrap each sandwich tightly in aluminum foil and pop them in the freezer.

Step 4

When you’re ready to eat, just unwrap a sandwich and microwave it for about 2 minutes until it’s hot and melty.

How To Present This Dish

Warm these sandwiches in the toaster oven or microwave until heated through. Serve with fresh fruit or a side of yogurt for a balanced breakfast. You can also add hot sauce or ketchup for extra flavor.

Keeping Leftovers Fresh

Store the sandwiches individually wrapped in an airtight container or freezer bag. They keep best for up to one month. When ready to eat, thaw overnight in the fridge or reheat directly from frozen, adjusting time as needed.
