Turn on your Instant Pot to the sauté setting. Pour in a bit of oil, then add the chopped onion and garlic. Cook them for about 3 to 5 minutes until they begin to soften and smell amazing. Next, add the beef and brown it on all sides, which should take around 5 minutes. Once the beef is browned, pour in the bourbon and use a spoon to scrape up any flavorful bits stuck to the bottom of the pot.

Turn off the sauté function, then add the potatoes, black beans, corn, mushrooms, and carrots. Sprinkle in the salt, chili powder, pepper, cumin, and cinnamon, giving everything a good stir to combine. Secure the lid, make sure it’s locked, and set the Instant Pot to the stew setting for 45 minutes. It’ll take about 10 to 15 minutes for the pressure to build.

When the cooking time is up, let the pressure release naturally—that means just wait patiently for about 15 to 20 minutes until the valve drops and it’s safe to open. Give everything a final stir, and your stew is ready to enjoy!
