Step 1
Warm your grill to medium-high and giving the grates a light brush of oil so the burgers don’t stick. In a small bowl, mix together the cranberry sauce, horseradish, lemon juice, and cumin. Season it with a bit of salt and pepper, then set that aside to let the flavors meld.
Step 2
Crack the egg into a mixing bowl and add the chopped celery and onion. Use your hand to mix everything until the egg is smooth and everything is combined. Then add the ground turkey along with the thyme, poultry seasoning, parsley, and bread crumbs. Gently mix everything together until it’s well combined but don’t overwork it. Shape the mixture into eight even patties.
Step 3
Place the patties on the grill and cook them for about 4 minutes on each side. You want to make sure they’re cooked through, so check that the juices run clear or use a meat thermometer—it should read 165°F in the center. Once they’re done, transfer the burgers to the buns and spoon some of that cranberry horseradish sauce on top. Serve and enjoy!
