Step 1

In a bowl, mix together the cream cheese, almonds, brown sugar, and lemon juice until everything is smooth and well combined. Spread this mixture over one side of each slice of bread. Next, pile about a quarter of the blueberries onto the cream cheese side of one slice, gently pressing them down so they don’t roll off. Top with another slice of bread that’s also spread with cream cheese to make a sandwich. Repeat this until you have four sandwiches.

In another bowl, whisk the eggs, milk, vanilla, and cinnamon until everything is blended. Heat a skillet over medium-low and spray it lightly with cooking spray. Dip each sandwich into the egg mixture, making sure both sides get coated, then cook them in the skillet. Fry each side for about 3 minutes or until they turn golden brown. Serve warm and enjoy!
