Step 1

Heat some oil in a large pan over medium-low heat. Toss in the whole spices and let them sizzle for about a minute. Then add the chopped onions and cook until they start to soften, about 1-2 minutes.

Step 2

Stir in the ginger-garlic paste and cook for another minute. When the onions begin to brown, add the chicken and cook, stirring often, for 5-7 minutes until the chicken turns white. Season with salt and mix well.

Cut 400g of tomatoes in half and place them skin-side up on top of the chicken. Cover the pan and let the tomatoes cook until they’re soft and tender.

Step 4

Once tender, peel off the tomato skins, stir everything together, and cook for another 3-4 minutes. Then add the yogurt and cook until the mixture thickens and looks a bit dry.

Step 5

Sprinkle in the coriander, cumin, chili, turmeric, and pepper powders. Give it a good mix, then add the green chilies and stir again.

Step 6

For that smoky finish, heat a piece of charcoal until red hot, drizzle a little oil on it, and place it in the pan. Cover and let it sit for a few minutes to absorb the smoky flavor.

And that’s it! Your delicious chicken Shinwari is ready to enjoy.

Serving Options

Serve with steamed rice or warm flatbread to soak up the delicious sauce. A side of fresh salad or pickled vegetables adds a nice contrast. Garnish with chopped herbs for a fresh finish.
