Combine the mayo and Sriracha sauce together in a small bowl, then pop it in the fridge to chill until you’re ready to serve. Next, heat up your air fryer to 390°F (about 200°C). While it’s warming, pat the scallops dry with a paper towel and season them lightly with salt and pepper. Wrap each scallop with about a third of a bacon slice and secure it with a toothpick.

Give the air fryer basket a quick spray with cooking spray to prevent sticking, then arrange the bacon-wrapped scallops in a single layer. You might need to cook them in batches so they don’t crowd the basket. Cook for around 7 minutes, then check to see if the scallops are opaque and the bacon is nice and crispy. If they need a bit more time, pop them back in for another minute or two, checking often so they don’t overcook.
