Step 1

Gently heat some olive oil in a pot over medium heat. Add the chopped onion and garlic, and cook them, stirring occasionally, until they smell amazing and start to soften—this usually takes about 2 to 4 minutes. Next, sprinkle in the red pepper flakes, turmeric, and garam masala. Stir everything together so the spices coat the onions nicely, cooking for another couple of minutes to bring out their flavors.

Now, add the lentils and broth to the pot. Turn the heat up to bring it all to a boil, then lower the heat, cover the pot, and let it simmer gently. Cook until the lentils are tender but still hold their shape, which should take around 15 minutes.
