Step 1

Lightly heat your oven to 350°F (175°C) and lightly grease a casserole dish. Bring a pot of salted water to a boil and cook the cauliflower, potatoes, and garlic cloves for about 5 to 7 minutes until they’re just starting to get tender. Drain well, then spread them out evenly in the casserole dish. Season with a little salt and pepper, and sprinkle the peas on top.

Pour the cheesy curry sauce over the veggies in the dish and cover everything with foil. Pop it in the oven and bake for about 20 minutes, until the vegetables are tender and everything is heated through. Serve it warm and enjoy!
