A great way to enjoy a hearty and healthy meal any time of day. It combines tender potatoes and fresh zucchini with eggs for a filling, flavorful dish. Plus, it’s easy to customize with your favorite herbs and cheeses.

Step 1

Bring a large pot of water to a boil, then drop in the potatoes and let them cook for about 5 minutes. Once they’re just tender, drain them and set them aside. Meanwhile, warm up some oil in a deep cast iron skillet over medium heat. Toss in the zucchini and onion, cooking until they turn golden and soft, which should take around 5 to 7 minutes. Add the potatoes back to the skillet and give everything a gentle stir to combine.

Step 2

In a bowl, beat the eggs with oregano, a pinch of cayenne pepper, salt, and pepper. Pour this mixture evenly over the veggies in the skillet and stir gently with a fork to distribute the eggs. Let it cook undisturbed until the eggs start to set, about 5 to 10 minutes.

Step 3

While the eggs are cooking, move an oven rack so it’s about 6 inches from the broiler and preheat the broiler. When the eggs are mostly set, pop the skillet under the broiler for about 5 minutes, keeping an eye on it until the top turns a lovely golden brown. Once done, take it out and let it cool just a bit before slicing and serving.

Serve warm or at room temperature with a simple green salad or fresh fruit on the side. A dollop of sour cream or a sprinkle of fresh herbs like parsley or chives can add a nice touch.
