Step 1
Heat your oven to 350°F (175°C). Place the ham fat side up on a rack inside a roasting pan. Take a sharp knife and score the fat in a crisscross pattern, then sprinkle some sea salt over it.
Step 2
In a small bowl, mix together the brown sugar, sorghum syrup, brown mustard, brandy, dry mustard, cinnamon, nutmeg, and ginger to make your basting glaze. Brush about a third of this mixture all over the ham, then press cloves into the fat to add some extra flavor. Pour some coffee into the bottom of the roasting pan to keep things moist and add depth.
Step 3
Pop the ham in the oven and cook it for about two hours. Every 30 minutes or so, brush on more of the glaze to build up a nice, sticky coating. Keep going until the internal temperature hits 165°F (74°C) when you check with a meat thermometer. Then it’s ready to slice and enjoy!
