Step 1
Gently heat your oven to 350Β°F (175Β°C) and grease a 9x13-inch baking dish. In a mixing bowl, combine the butter, powdered sugar, and the seeds from the vanilla bean. Beat everything together on low speed until itβs nice and smooth. Next, sift in the flour bit by bit, mixing just until the dough comes together and pulls away from the sides of the bowl β be careful not to overmix. Press the dough evenly into your prepared dish.
Step 2
Pop it in the oven and bake until it turns a light golden color, about 18 minutes. Once itβs out, let it cool for about 10 to 12 minutes while you make the chocolate ganaches. For the dark chocolate ganache, gently melt the dark chocolate chips with 2 tablespoons of cream in a small saucepan over low heat, stirring constantly until smooth. Do the same with the white chocolate chips and the remaining cream in another pan, watching closely so the chocolate doesnβt burn.
Step 3
Using two spoons, drizzle both the dark and white ganaches generously over the warm shortbread. Let the chocolate set for around 10 minutes, then cut into squares and enjoy!
