Finish it off by stirring in the rice vinegar and toasted sesame seeds. Pop the whole bowl into the fridge for at least 30 minutes to let the flavors meld. When you’re ready to eat, sprinkle the remaining scallions on top and serve with lime wedges for a little fresh zing.
