What Makes This Dish So Tasty

A perfect blend of savory flavors and satisfying textures. The combination of fluffy eggs and salty ham adds a rich depth to the classic fried rice, making it both comforting and easy to prepare for any meal.

Kitchen Tricks

- Use day-old rice for the best texture; it prevents the dish from becoming mushy.
- Cook the eggs separately first to keep them fluffy and avoid overcooking.
- Stir-fry ingredients on high heat to get a nice sear and enhance the flavors.

Step 1

Heat some oil in a large nonstick skillet over medium-high heat. Toss in the bell pepper and carrots, and sauté them for about 2 minutes until they begin to soften. Then add most of the green onions (save a little for garnish), along with the ham, green peas, and garlic. Cook everything together for another 3 minutes so the flavors meld.

Step 2

Stir in the rice—no need to heat it beforehand. Drizzle soy sauce and a splash of vinegar over the mixture, and let it cook for about 3 minutes, stirring occasionally to keep it from sticking.

Step 3

Now, make four little wells in the rice and crack an egg into each one. Cover the pan and let it cook until the egg whites are set and the yolks reach the doneness you like, usually around 5 to 7 minutes.

Step 4

Once the eggs are cooked, uncover the pan and sprinkle the remaining green onions on top. Serve it up and enjoy!

Serving Advice

Serve alongside a fresh cucumber salad or steamed vegetables to add a refreshing crunch. A drizzle of soy sauce or a sprinkle of chopped green onions can also brighten up the dish.

How To Store Leftovers

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a pan or microwave, adding a splash of water to keep the rice moist. Avoid freezing, as it may change the texture.

The flavor was good but I think it needs a bit more garlic next time. Still a solid recipe for quick cooking.
