Why This Dish Is A Crowd Favorite

Packed with natural sweetness and creamy texture without any dairy or animal products. It’s hearty, satisfying, and perfect for those following a plant-based lifestyle. Plus, it’s easy to customize with your favorite spices and toppings.

Helpful Cooking Tips

- Choose sweet potatoes that are firm and without blemishes for the best flavor.
- Be sure to bake the potatoes until they are very soft to make mashing easier.
- Use a fork to fluff the inside before mixing in your other ingredients for a lighter texture.

Step 1

Lightly heat your oven to 375°F (190°C). Give your sweet potatoes a good poke all over with a fork, then rub them with a tablespoon of sea salt. Pop them on a baking sheet lined with parchment paper and bake for about 50 to 60 minutes, or until a knife slides in easily. Once they’re cool enough to handle, slice them in half lengthwise.

Step 2

Carefully scoop out the insides into a big bowl, keeping the skins intact—these will hold your filling later. Mash the sweet potato flesh until smooth, then stir in the cream cheese, butter, brown sugar, salt, pepper, cinnamon, nutmeg, and ginger until everything is well combined. Spoon this mixture back into the potato skins and place them on the baking sheet again.

Step 3

Sprinkle the tops with panko breadcrumbs, then add strips of vegan Cheddar in a lattice pattern for some cheesy goodness. Slide them back into the oven and bake until they start to brown, around 10 to 12 minutes. Take them out, sprinkle with parsley and green onions, and bake for another 3 to 5 minutes. Before serving, give them a final dusting of nutmeg for a little extra warmth and flavor.

Best Serving Ideas

Serve these twice-baked sweet potatoes alongside a fresh green salad or roasted vegetables for a balanced meal. They also make a great side dish for any holiday or family dinner, adding warmth and color to the table.

Best Storage Tips

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave until warmed through. You can also freeze them for up to a month, but texture may change slightly upon thawing.

Really good flavors but I think I added too much salt by accident. Otherwise, easy and took less time than expected.
