Step 1

Heat some vegetable oil in a large pot or Dutch oven over medium heat. Once the oil is hot, add the chopped onion, celery, and garlic, and cook them gently for about 5 minutes until they’re soft and fragrant. Next, add the ground beef to the pot and cook it, breaking it up with a spoon, until it’s nicely browned and no longer pink, which should take around 5 to 10 minutes. Drain off any excess grease to keep things from getting too oily.

Step 2

Now, stir in the diced tomatoes, tomato sauce, water, Worcestershire sauce, chili powder, garlic powder, oregano, salt, and pepper. Bring everything up to a boil, then turn the heat down to medium-low. Cover the pot and let it simmer gently, stirring every now and then, for about an hour and a half so all the flavors have time to meld together.

Step 3

About 10 minutes before you’re ready to serve, toss in the kidney beans and let the chili simmer uncovered. This gives the beans a chance to heat through and soak up some of that delicious flavor. Once that’s done, give it a taste, adjust the seasoning if needed, and enjoy!
