Step 1

Warm your oven to 350°F. In a large nonstick skillet over medium-high heat, cook the ground beef, stirring now and then, until it’s fully browned—this should take about 5 minutes. Once done, transfer the beef to a bowl and set it aside for a bit.

Step 2

Using the same skillet, add the Knorr® Rice Sides™ Cheddar Broccoli mix, water, and beans. Bring everything to a boil over high heat, then lower the heat to medium. Cover the pan and let it cook for about 7 minutes, or until the rice is nice and tender. Stir the cooked beef back into the skillet, take it off the heat, and let it sit for a couple of minutes. Then, mix in half a cup of salsa and half a cup of cheese.

Step 3

Lay out your tortillas and spoon about 3/4 cup of the beef and rice mixture onto each one. Roll them up snugly.

Step 4

Grab a 13x9-inch baking dish and spread half a cup of salsa across the bottom. Place the burritos seam-side down in the dish. Pour the remaining salsa down the center of the burritos and sprinkle the rest of the cheese on top. Cover everything tightly with foil.

Step 5

Pop the dish in the oven and bake for about 25 minutes, until everything is heated through. When it’s ready, sprinkle with some chopped green onions for a fresh touch before serving.

Serving Options

Serve with a side of salsa, sour cream, or guacamole for added freshness and creaminess. A simple green salad or Mexican rice can also complement the meal nicely. For extra heat, add sliced jalapeños or a dash of hot sauce.

Reheating And Storage

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, wrap in foil and warm in the oven or microwave until heated through. You can also freeze the burritos individually; just thaw overnight before reheating.
