Step 1
Lightly heat your oven to 350°F and grease a 9x13-inch baking dish. Bring a pot of water to a boil, then slowly whisk in the grits, stirring constantly to avoid lumps. Turn the heat down to medium-low and let the grits simmer until they're thick and tender, about 3 to 4 minutes, stirring all the while.
Step 2
While the grits cook, heat a skillet over medium-high and add the grated SPAM®. Cook it until it’s nicely browned, turning it now and then. Drain off any extra grease, then stir half of the cooked SPAM® into the grits along with the tomatoes, sour cream, and half of the shredded Cheddar. Spread this mixture evenly in your prepared baking dish.
Step 3
Sprinkle the remaining SPAM® and cheese over the top. Pop it in the oven and bake until it’s hot all the way through and the cheese is melted and bubbling, about 30 minutes. Let it cool a bit before serving.
