Step 1

Heat your oven to 350°F (175°C) and lightly brush a large baking sheet with olive oil. In a bowl, mix the water and soy flour until you get a thick batter, kind of like pancake batter. On a shallow plate, combine the bread crumbs with herbes de Provence, garlic powder, salt, pepper, and a pinch of cayenne for a little kick.

Step 2

Dip each zucchini spear into the batter, then roll it in the seasoned bread crumbs until well coated. Arrange the zucchini on the baking sheet with the cut side down, making sure they’re all facing the same way.

Step 3

Pop the tray in the oven and bake for about 10 minutes until the bottoms start to turn golden. Flip them over to the other cut side and bake for another 10 minutes. Then, turn the spears so the skin side is down and let them bake for about 5 more minutes until they’re nicely browned.

Step 4

Once they’re done, transfer the fries to a serving plate and enjoy them with some vegan mayo and ketchup on the side.
