Why You'll Want This Again

A wonderful way to enjoy a healthy vegetable with a sweet twist. The combination of apple and cinnamon adds warmth and natural sweetness, making it a cozy option for any season. It’s light, flavorful, and perfect for those looking to try something new and nutritious.

Cooking Hints

- Roast the squash until tender but not mushy for the best texture.
- Use fresh cinnamon for a more vibrant flavor.
- Add a little maple syrup or honey if you want extra sweetness without overpowering the natural flavors.

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking sheet with cooking spray. Give the spaghetti squash a quick zap in the microwave for about a minute to make it easier to cut. Carefully slice it in half and scoop out the seeds. Place the squash halves cut-side down on the baking sheet.

Step 2

Pop the squash in the oven and bake until it starts to get tender, around 30 minutes. Then, flip the halves over using tongs. Add a tablespoon of butter into each cavity and sprinkle some brown sugar over the top. Dust with a little nutmeg and cinnamon, then fill the cavities with sliced apples.

Step 3

Put the squash back in the oven and bake until the apple slices are soft and everything is nicely cooked through, about 30 to 40 minutes more. When it’s done, scoop the squash strands out with a fork and serve them over the tender apple slices on your plates. Enjoy!

How To Plate This Dish

Serve warm as a side dish or a light dessert. It pairs nicely with roasted chicken or pork, and you can also top it with a dollop of Greek yogurt or a sprinkle of chopped nuts for added texture and creaminess.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven to maintain the best flavor and texture. Avoid freezing, as the squash may become watery when thawed.

Made this twice now, and every time it’s a hit. The texture is great and the flavors remind me of fall desserts.
