Why You'll Love Making This

These biscuits are a delightful mix of sweet and crunchy textures. They carry a rich history and are easy to make with simple pantry ingredients. Their golden color and chewy centers make them a perfect treat for any occasion.

Helpful Cooking Tips

- Use rolled oats rather than quick oats for a better texture.
- Press the dough gently to flatten the biscuits before baking for even cooking.
- Keep an eye on baking time to avoid over-browning; they should be golden but still soft inside.

Step 1

Lightly heat your oven to 350°F (175°C) and lightly grease two baking sheets. In a large bowl, combine the quick oats, flour, coconut, brown sugar, and ginger. Use your fingers to make a little well in the center of the dry mix.

Step 2

Dissolve the baking soda in some boiling water. In a small saucepan, melt the butter, then stir in the golden syrup until everything is well mixed. Pour the baking soda mixture into the melted butter and syrup, then add this wet mixture into the well you made in the dry ingredients.

Step 3

Gently stir everything together until just combined — don’t overmix. Drop spoonfuls of the dough, about a rounded tablespoon each, onto your prepared baking sheets, leaving a couple of inches between each one.

Step 4

Pop them in the oven and bake until they turn a nice golden brown, which should take around 10 to 15 minutes. Let them cool a bit before enjoying!

Serving Variations

Enjoy these biscuits with a cup of tea or coffee for a comforting snack. They also pair well with a spread of butter or your favorite jam. Perfect for lunchboxes or a sweet afternoon pick-me-up.

Storage Instructions

Store the biscuits in an airtight container at room temperature to keep them crisp. They can last up to two weeks when stored properly. For longer storage, freeze them in a sealed bag and thaw before serving.
