Cooking Techniques

- Marinate the chicken for at least 2 hours to enhance the flavor.
- Grill the skewers over medium heat to avoid burning while keeping the meat juicy.
- Toast the peanuts before blending to deepen the sauce’s flavor.

Step 1

Put the chicken cubes in a big bowl. In a food processor, combine the onions, brown sugar, garlic, shrimp paste, galangal powder, coriander, cumin, anise seed, black pepper, and turmeric. Blend everything until you get a smooth paste. Pour this mixture over the chicken and toss well so all the pieces are nicely coated. Cover the bowl with plastic wrap and pop it in the fridge to marinate for about 24 hours.

Step 2

When you’re ready to cook, set your oven rack about 6 inches from the heat and turn on the broiler. Line two baking sheets with foil to make cleanup easier. Thread the marinated chicken onto bamboo skewers, leaving some space so you can hold them comfortably, then lay the skewers out on the baking sheets.

Step 3

Pop them under the broiler and cook until the tops are nicely browned, which should take around 10 minutes. Flip the skewers over and broil the other side for another 10 minutes or so. To be sure they’re cooked through, check that the chicken reaches at least 165°F (74°C) in the center before serving.

Creative Serving Ideas

Serve with fragrant jasmine rice or coconut rice to soak up the sauce. Add a side of fresh cucumber slices or a simple salad to balance the richness. A wedge of lime on the side adds a bright, tangy finish.
