Step 1
Lightly heat some oil in a large pot over medium heat. Toss in the chopped onion and garlic, stirring occasionally until the onions get soft and a bit translucent, about 5 to 10 minutes. Then add the ground beef, season it with salt and pepper, and cook until itβs nicely browned and crumbly, around 5 to 7 minutes. Pour in the crushed tomatoes, and use the empty tomato can to scoop up some water and add that to the pot too.

Stir in the chopped eggplant, zucchini, mushrooms, carrots, tomato puree, a good pinch of salt (about 2 tablespoons), and your herbsβbasil, black pepper, oreganoβand toss in a bay leaf. Bring everything to a boil, then lower the heat to medium-low and let it simmer gently, stirring now and then so all the flavors meld together. This should take about an hour. When itβs ready, fish out the bay leaf and discard it.
Step 3
While the sauce simmers, bring a large pot of salted water to a boil and cook your lasagna noodles until theyβre tender but still have a bit of bite, about 8 minutes. Drain them carefully and lay the noodles out on some paper towels to dry, tossing any broken pieces.

In a bowl, mix the ricotta cheese with an egg, seasoning with a pinch of salt and pepper, and whisk until smooth.

Now preheat your oven to 375Β°F (190Β°C). Spread a layer of sauce on the bottom of a large baking dish. Then start layering: noodles, the ricotta mixture, more sauce, mozzarella cheese, and a sprinkle of Parmesan on top. Keep layering until you run out of ingredients, finishing with a cheesy top. Cover the whole thing with foil.
Step 6
Bake it for about 30 to 35 minutes until itβs bubbling nicely. Then take off the foil, crank the oven up to 400Β°F (200Β°C), and bake for another 10 to 15 minutes until the top turns golden brown. Let it rest for 10 to 15 minutes before slicing and serving so it sets up nicely.
