Step 1

Heat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Chop the broccoli into smaller florets and pulse half of them in a food processor about 20 times until they’re broken down into rice-sized pieces. Do the same with the rest.

Step 2

Pour about half an inch of water into a large, shallow pan, add a teaspoon of salt, and bring it to a boil. Lower the heat, add the broccoli rice, cover, and let it simmer gently for around 5 minutes until it’s tender. Drain well and let it cool for about 10 minutes.

Step 3

Once cooled, wrap the broccoli rice in a clean kitchen towel and squeeze out as much moisture as you can. In a big bowl, mix together the broccoli, cheddar cheese, bread crumbs, chopped onion, egg, parsley, garlic, cumin, and black pepper until it holds together when you press it.

Step 4

Using a small scoop or spoon, portion out about 1½ tablespoons of the mixture, roll it into a ball, then flatten it into a little tot shape with a bit of oil on your hands to keep it from sticking. Place them on your baking sheet and repeat until all the mixture is used.

Step 5

Drizzle a little olive oil over the tots and sprinkle the remaining teaspoon of salt on top. Pop them in the oven and bake for about 24 minutes, flipping them halfway through so they get golden and crispy all over. Enjoy warm!
